WebIn both modes you use Alt + middle click to select the block to use/fill, and in the Replace mode you additionally use Shift + middle click to select which block to replace. Then you use the executeOperation hotkey to do the replacement. I don't remember whether or not selecting the block works with fluids though... I need to check that.
